Endive salad with goat cheese and apricots

6 endives

- 6 fresh or dried apricots in season

- 1 piece of goat cheese

- 2 tablespoons of dry golden wine

- 2 tablespoons of slivered almonds

- 2 tablespoons of balsamic vinegar

- 6 tablespoons of oil

- Chives, chervil, salt, pepper


     * Cut the endives into rounds
     * Cut the apricots into small pieces
     * Cut the splint goat into thin strips
     * Place all ingredients in a bowl and add the almonds and raisins
     * In a bowl, combine the vinegar and oil. Pour over salad and sprinkle with chervil and chopped chives
